Sausage and Gravy Breakfast Casserole

A traditional biscuits and gravy breakfast in casserole form! It's delicious right out of the oven, but even better the next day!

  1. Preheat oven to 350 degrees. Grease a 9x13 pan and set aside.

Make White Gravy:

  1. Melt 4 tablespoons butter in a saucepan. Whisk in 1/4 cup flour and stir until smooth. Add salt and pepper to taste.
  2. Whisk in 2 cups prepared milk. Bring to a simmer, stirring occasionally to prevent burning. When sauce has thickened, remove from heat (total time about 10 minutes).

For the Casserole:

  1. Cut up each biscuit into 6 parts.
  2. Place Sausage Crumbles and Spinach in a bowl, and cover with hot water (1 1/4 cup). Cover and let set 10 minutes.
  3. Prepare the eggs by mixing Scrambled Egg Mix, 1 1/2 cups water, 1/2 teaspoon salt, 1/2 teaspoon pepper, and 1/2 cup prepared milk. Whisk until well-blended.

Assemble Casserole:

  1. Evenly distribute biscuit pieces over bottom of greased pan.
  2. Drain Sausage and Spinach mix of any extra water. Then sprinkle this mixture evenly over the biscuits.
  3. Sprinkle refreshed cheese over sausage layer. Then pour scrambled eggs over all. Lastly, moving pan from side-to-side as you pour, pour white gravy over all ingredients.
  4. Bake in pre-heated oven 35 minutes or until biscuits are cooked and lightly golden.
